- Cut the chicken sausages into cubes and set aside. Chop the spring onions and sherry tomatoes and set aside. Grate the cheese in a bowl
- Mix the cubed chicken sausages, spring onions and sherry tomatoes and pour on the eggs. Add black pepper, grated cheese and cover for 60 seconds.
- Serve in a large plate and slice into triangular shapes. Serves 4.
